Omelette Breakfast
Ingredients:
- 2 eggs
- 1/4 cup shredded cheese
- 1/4 red pepper, diced
- 1/4 tomato, diced
- 1/4 onion, diced
- 1 slice bacon
- Dairy-free yogurt
- Berries
- Coffee / Tea
- Full-fat cream
- Sugar-free sweetener
Directions:
- In a small skillet, cook eggs over easy or to your preference.
- Add in cheese, red pepper, tomato and onion. Mix together and cook until veggies are soft.
- Place bacon on a paper towel-lined plate and microwave for 30-60 seconds, until crisp. crumble and add to the eggs.
- Serve eggs with dairy-free yogurt and berries. Enjoy coffee or tea with full-fat cream and sugar-free sweetener.
