Salad with Chicken Lunch
Salad with 50g – 70g leftover chicken, brined pickles, 1/2 cup asparagus, boiled egg and 2 – 3 Tbsp Banting mayo
This salad is perfect for those who are looking for a lighter meal. The chicken and vegetables provide plenty of protein and fibre, while the boiled egg adds some healthy fats. This dish is also relatively easy to prepare, so it’s perfect for busy weeknights
Ingredients:
- 50g to 70g of leftover chicken
- Brined pickles
- Half a cup of asparagus
- One boiled egg
- Two to three tablespoons of Banting mayo
Instructions:
Simply combine all ingredients in a large bowl and enjoy! If you’re feeling adventurous, you could add some other vegetables or even some fruits. Get creative and have fun with it!
