Salmon Fillet, Sweet Potato Dinner
This meal is perfect for those looking for a hearty yet healthy meal. The salmon and vegetables provide plenty of protein and fibre, while the sauce adds a touch of richness. This dish is also relatively easy to prepare, so it’s perfect for busy weeknights
Ingredients:
- 100g to 120g salmon fillet Half a cup of sweet potato
- One cup of green-list vegetables
- A homemade creamy-lemon butter sauce (make lemon butter and then add a dollop of cream to finish)
- Capers (optional)
Instructions:
- preheat the oven to 375 degrees F.
- Place salmon on a baking sheet and roast for 25minutes, or until cooked through.
- Meanwhile, roast sweet potato and green-list vegetables on another baking sheet for 20 minutes.
- To make the sauce, combine lemon butter and cream in a small saucepan over low heat.
- When everything is finished cooking, plate the salmon and vegetables together and spoon sauce over the top. Enjoy!
